Tap or click to harvest sugarcane and collect money. Spend money on factories, which process cane without your input, and on research, which improves yield per harvest. The game is landscape and plays equally well with a mouse or on a phone turned sideways.
Decisions are made between actions rather than under time pressure, so nothing is lost by pausing to read an upgrade before buying it.
Factories first, research second
The most common early mistake is buying research before you have production to apply it to. Research multiplies output; if output is small, the multiplier is small. Buy your first two or three factories, then start alternating: a factory, then the research that makes that factory type better, then another factory.
Once several factories are running, the balance flips and research becomes the better purchase, because you are now multiplying a much larger base.
Sugarcane varieties
The research tree unlocks new cane varieties as well as flat improvements. New varieties are usually worth taking as soon as they appear, since they raise the ceiling on every field you own rather than improving one of them. Flat percentage upgrades are best bought in bulk later, when a percentage of your income is worth more than it is now.
Playing it idle
The game is built to be left alone for stretches. Before you stop playing, convert cash into factories; money in hand earns nothing, while a factory earns continuously. Coming back to a full bank and an empty field is the sign of a session that ended badly.

My Sugar Factory is easiest to manage when the player follows the material from cane to factory to research instead of buying every upgrade at once. If cane is plentiful but processing is slow, the next factory helps more than another field. If processing has outpaced harvest, the reverse is true. Research changes the value of those choices, which is why a small pause to inspect the chain often earns more than repeatedly tapping the first available button.
Each upgrade should have a job in that chain.
